- 4 egg whites
- 1 1/2 c. sugar
- 1 tsp. vanilla
- 1 c. chopped pecans
Directions

1Beat egg whites (at room temperature) in a medium mixing bowl until foamy; add sugar, 2 teaspoons at a time, beating until stiff peaks form.

2Fold in vanilla and pecans.

3Drop mixture by heaping teaspoonfuls 2 inches apart onto waxed paper-lined cookie sheet. Bake at 250° for 55 minutes.

4Remove from waxed paper and cool on wire racks.

5Store in airtight containers.

6Yields 8 dozen.
