Pecan Shortbread

  • 2 1/4 cups all-purpose flour
  • 2 tbsp rice flour
  • 1/3 cup brown sugar
  • 1 cup butter, cubed
  • 1/2 cup chopped pecans

    Preheat oven to 325°F. Line 2 baking trays with parchment paper.

    Sift all-purpose flour and rice flour into a bowl. Add sugar. Cut in butter until mixture resembles breadcrumbs. Press together to form a dough then turn out onto a lightly floured surface and gently knead pecans into mixture. Roll out to about 1/4 inch thick. Using a fluted 2 1/2 inch round cookie cutter, cut out discs. Place on prepared trays and bake for 10-15 mins, until golden. Let cool for 5 mins on trays then transfer to a wire rack to cool completely.
