Pecan Shortbread Cookies

  • 2 sticks Unsalted Butter, Softened
  • 1/4 cups Sugar
  • 2 teaspoons Vanilla
  • 2 cups All-purpose Flour
  • 1/2 cups Chopped Pecans

Directions

    Preheat oven to 350°F.

    In a large mixing bowl, cream together butter, sugar, and vanilla. Add flour and pecans. Continue to mix until dough comes together and is no longer crumbly, about five minutes.

    Turn dough out onto a lightly floured surface. Roll to 1/2-inch thickness. Cut with a cookie cutter. Place cookies on an ungreased cookie sheet at 1/2-inch distance apart. Bake for 20 minutes, rotating cookie sheets halfway through cooking time.
