Pecan Stuffed Mushrooms

- 1 lb. large mushrooms
- 1/4 c. chopped green pepper
- 2 Tbsp. chopped onion
- 2 Tbsp. margarine
- 1 c. chopped pecans
- 1/2 c. shredded cheese
- 1 egg, slightly beaten
- 1/4 tsp. salt
- dash of ground red pepper
Directions

1Remove stems from mushrooms; chop stems.

2Arrange mushroom caps on greased baking sheet.

3In skillet, cook chopped mushroom stems, green pepper and onion in margarine until tender.

4Stir in pecans and remaining ingredients.

5Spoon about 1 tablespoon of pecan mixture into each mushroom cap.

6Bake at 400° for 15 minutes.

7Serve hot.
