Pecans Delight

Ingredients

  • 3 egg whites
  • 1 tsp. baking powder
  • 3/4 c. chopped pecans
  • 1/2 tsp. vanilla
  • 1 c. sugar
  • 1 c. cracker crumbs (saltines or Hi Ho)

Directions

    Beat egg whites until stiff; add sugar, baking powder and vanilla.

    Beat and mix well.

    Fold in nuts and crumbs.

    Mix carefully and pour into a well-greased 9-inch pie pan (I use Pam). Bake at 350° for 30 minutes.

    Let cool for 2 hours.

    Top with whipped cream and pecans.

    Makes at least 6 servings.
