Penne Ala Vodka

Ingredients
- 1 medium-large onion, chopped fine
- 1 teaspoon butter
- olive oil (enough to coat bottom of pan)
- 14 lb prosciutto, chopped (about 7-8 slices)
- 28 ounces whole tomatoes, hand squeezed (I like san marzano)
- 12 pint heavy cream
- 2 ounces vodka (1 shot glass)
- salt & pepper
- 14 cup water
- 1 12 lbs penne pasta
- grated parmesan cheese
Directions

1Chop onion finely and saute in butter and olive oil.

2When onion is soft (not golden) add prosciutto and cook together.

3Be careful not to burn.

4Add tomatoes and water and season with salt & pepper.

5After cooking 1 hour on very low heat, add vodka and continue to cook another 15 minutes.

6Meanwhile, cook penne al dente.

7Add cream last and cook to a slow boil.

8Toss with penne and cheese.

9Enjoy!
