  • 1 box penne rigate (Ronzoni Smart Taste)
  • 1/2 c. frozen peas
  • 1 1/2 tsp. olive oil
  • 13 c. chopped shallots
  • 1/4 c. vodka
  • 2 c. marinara sauce
  • 4 oz. fat-free cream cheese

Directions

    Cook pasta in large pot of salted boiling water as box directs.

    Add peas just before draining pasta.

    Meanwhile, heat olive oil in a medium saucepan.

    Add shallots; cover and cook over medium heat 3 minutes.

    Add vodka; boil until evaporated, about 2 minutes.

    Stir in marinara sauce; simmer 2 minutes to blend flavors.

    Stir in cream cheese and cook, stirring until melted.

    Drain pasta and peas.

    Return to pot; add sauce and gently toss to combine.
