  • 1 lb. penne pasta
  • 2 cans diced tomatoes
  • 1 Tbsp. fresh, minced garlic
  • 3 Tbsp. olive oil
  • 4 to 5 Tbsp. balsamic vinegar (or use Paul Newman balsamic vinaigrette)
  • 1/3 c. packed, fresh basil, sliced
  • fresh grated Parmesan cheese

Directions

    Cook pasta. In a skillet, combine all other ingredients and simmer. Drain pasta and combine with heated tomato mixture. Top with Parmesan cheese.
