Pepper Casserole

Ingredients

  • 1 pkg. Italian sweet or hot sausage
  • 4 peppers, cut up
  • 4 onions, cut up
  • 1 jar Ragu spaghetti sauce (large)
  • 1 jar cut up mushrooms
  • 1 eggplant, peeled and cut up
  • 1/2 c. water
  • water as needed

Directions

    In frypan, place sausage links in 1/2 cup of water.

    Simmer for about 5 minutes.

    Pour off water and fat.

    Brown sausage.

    Cut up in chunk size.

    Add to other ingredients.

    Bake in 350° oven in large pot for 1 1/2 hours, adding water as needed so it won't stick, stirring occasionally.

    Serve with noodles or rice.

    A crock-pot may be used also for all day cooking.
