- 100 g butter, chopped
- 1/2 cup brown sugar
- 2 tablespoons maple syrup
- 3/4 cup corn flakes, lightly crushed
- 1/2 roasted peanuts, chopped
- cake mix
- 125 g butter
- 3/4 cup brown sugar
- 2 eggs
- 1 1/2 cups self raising flour
- 1 teaspoon ground cinnamon
- 1/2 cup buttermilk
- 2 tablespoons maple syrup
Directions

1Grease 14 cms x 21 cms loaf pan, line base and sides with baking paper.

2Combine butter, sugar and syrup in bowl, mix well.

3Spread over base of pan, sprinkle with cornflakes and nuts.

4CAKE MIX.

5Beat all cake batter ingredients in a medium bowl with electric mixer on low speed till combined well and smooth.

6Spread this mix over cornflake mixture in pan.

7Cook at 180 C for 55 minutes.

8Let stand in tin 10 minutes before turning out.
