  • 1/2 c. chopped onion
  • 2 Tbsp. butter
  • 4 oz. jar chopped pimentos
  • 2 Tbsp. chopped chili peppers
  • 3 cans cream of mushroom soup
  • 3 to 4 c. cut-up, cooked chicken
  • 12 oz. egg noodles
  • 1 lb. shredded Cheddar cheese

    Cook onion in butter until tender.

    Stir in pimentos, peppers, soup and chicken.

    Layer 1/2 of noodles, 1/2 of chicken mixture and 1/2 of cheese in 4-quart casserole.

    Repeat layers.

    Bake 35 to 40 minutes (until cheese starts to brown) in oven at 350°.
