  • 6 medium potatoes, peeled and cut into 1/4 inch slices
  • 1 medium onion, sliced
  • 1/3 cup butter or margarine, melted
  • 1/2 tsp. salt
  • 1/4 tsp. chili powder
  • 1/8 tsp. cayenne pepper
  • 1/8 tsp. pepper
  • 1 1/2 cups shredded pepper Jack or Monterey Jack cheese, divided

Directions

    In a large bowl, combine the potatoes and onions.

    Combine the butter and seasoning; drizzle over the potatoes and onions. Toss to coat.

    Place half in a greased 13 x 9 x 2 inch baking dish.

    Sprinkle with half the cheeses; top with remaining potatoes and onions.
