- 6 green peppers, chopped
- 6 red peppers, chopped
- 6 medium onions, chopped
- 2 c. vinegar (5% acidity)
- 1 1/2 c. sugar
- 2 Tbsp. plus 1 tsp. mustard seed
- 1 fresh hot pepper
Directions

1Combine all ingredients in a large Dutch oven and bring to boil.

2Reduce heat to medium.

3Cook uncovered 30 minutes, stirring occasionally.

4Discard hot pepper.

5Pack into hot sterilized jars, leaving 1/4 inch headspace.

6Cover with metal lids.

7Screw bans tight.

8Process in boiling water bath 5 minutes.
