- 1 1/2 lb. round steak
- 1/4 c. soy sauce
- 1 clove garlic, minced
- 1/2 tsp. ground ginger
- 1/4 c. oil
- 6 to 8 green onions, sliced
- 3 to 4 green peppers, cut
- 2 stalks celery, cut thin
- 1 Tbsp. cornstarch
- 1 c. water
- 2 tomatoes, cut into wedges
Directions

1Cut beef into thin strips.

2Combine with soy sauce, garlic and ginger.

3Stir and set aside while preparing vegetables.

4Heat oil in a large skillet.

5Add beef and stir over high heat until browned.

6Cover and simmer for 30 minutes on low heat.

7Turn heat up and add vegetables.

8Stir until tender, but crisp, about 10 minutes.

9Mix cornstarch with water; add to pan.

10Stir until thickened.

11Add tomatoes and heat through.

12Serve over rice.
