- 1 1/4 lb. beef round or sirloin
- 1/4 c. vegetable oil
- 1 c. water
- 1 medium onion, cut in 1/4-inch slices
- 1/2 tsp. garlic salt
- 1/4 tsp. ginger
- 2 medium peppers, cut in strips
- uncooked instant rice
- 1 Tbsp. cornstarch
- 2 Tbsp. soy sauce
- 2 medium tomatoes
Directions

1Trim fat from beef; cut in strips.

2Heat oil in skillet.

3Add beef; cook until brown, about 5 minutes.

4Stir in water, onion, garlic salt and ginger.

5Heat to boiling and reduce heat.

6Cover and simmer for 12 to 15 minutes for round steak and 5 to 8 minutes for sirloin.

7Add green pepper strips during the last 5 minutes of simmering.

8Cook instant rice.

9Blend cornstarch and soy sauce. Stir into beef mixture.

10Cook, stirring constantly, until mixture thickens and boils.

11Let boil for 1 minute.

12Cut each tomato into eighths and place on beef.

13Cover and cook over low heat for 2 to 3 minutes.

14Serve with rice.
