Ingredients
- 1 1/2 lb. sirloin steak, 1/2-inch thick
- 2 medium onions (about 1 c.), chopped
- 3 Tbsp. soy sauce
- 2 green peppers, cut in 1-inch squares
- 1/2 c. cold water
- 3 to 4 c. rice
- 1/2 tsp. salt
- 1 can beef broth
- 1 clove garlic, minced
- 2 Tbsp. cornstarch
- 1 can tomatoes
Directions

1Trim fat and bone from meat; cut into 4 to 6 serving pieces. Grease large skillet lightly with fat from meat.

2Brown thoroughly on one side; turn and season with remaining 1/4 teaspoon salt. Push meat to one side.

3Add onions and cook and stir until tender. Stir in broth, soy sauce and garlic.

4Cover and simmer 5 minutes. Blend cornstarch with water; stir gradually into meat mixture. Cook, stirring constantly, until mixture thickens.

5Boil and stir 1 minute.

6Add tomatoes.

7Heat thoroughly.

8Serve over rice.
