- 4 small yukon gold potatoes
- salt
- 12 small yellow onion
- 14 small sweet red pepper
- 14 small yellow sweet pepper
- 1 small jalapeno pepper, seeded
- 14-12 cup light mayonnaise
- salt
- 14 teaspoon cayenne pepper
Directions

1Scrub potatoes; do not peel.

2Cube potatoes and boil in salted water until fork tender, about 15 minutes.

3Drain and cool.

4Finely chop yellow onion and all peppers; combine in a bowl; add cooled potatoes.

5Sprinkle salt to taste.

6Add mayonnaise and mix thoroughly.

7Spoon and press into a small bowl; level top with spoon.

8Sprinkle with cayenne pepper.

9Refrigerate for at least 1 hour to blend flavors.
