- 1 (4 to 6 lb.) sirloin tip roast
- 5 cloves garlic, peeled and cut into small pieces
- cracked or coarsely ground black pepper
Directions

1Heat oven to 500°.

2Cut inch deep incisions all over roast; insert garlic in slits so they disappear into meat.

3Sprinkle meat all over with pepper and place fat side up in roasting pan.

4Allow 7 minutes per pound for medium rare.

5Do not open door!

6Finished roast will be brown, crisp on outside and pink throughout.

7Add water to drippings and heat again to pour over thin slices.
