Peppered White Bean Mash

Ingredients

  • 2 tablespoons olive oil, divided
  • 2 garlic cloves, minced
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon fresh lemon juice (about 1 small lemon)
  • 2 (19-oz.) cans cannellini beans, drained and rinsed
  • 1 teaspoon table salt
  • 1 teaspoon freshly ground black pepper

Directions

    Heat 1 Tbsp. oil in a large skillet over medium heat. Add garlic, and saute 1 minute.

    Add thyme, lemon juice, beans, and 1 cup water. Cook, stirring often, over medium heat 4 minutes or until thickened. Stir in salt and pepper, and place bean mixture into a large bowl. Mash with a potato masher, leaving some beans whole. Drizzle mash with remaining 1 Tbsp. oil.
