Peppermint Chai Tea

- 4 cups water
- 1 tablespoon cardamom pod
- 1 tablespoon fresh ginger, grated
- 1 teaspoon whole cloves
- 1 teaspoon black peppercorns
- 1 cinnamon stick (3 inches long)
- 4 peppermint tea bags or 4 teaspoons loose peppermint tea
- For serving
- pure maple syrup
- vanilla soymilk or plain soymilk
Directions

1In a medium saucepan, combine the water and spices.

2Cover and bring to a boil over high heat. Immediately reduce the heat and simmer for 5 minutes.

3Remove from the heat and add the peppermint tea. Cover the pan and let steep for 3 to 5 minutes; the longer you leave it, the stronger the tea will be.

4Strain out the spices and tea. Serve immediately, letting each person add syrup and soy milk to their taste.
