- 1/2 c. chopped red or green peppers
- 1/2 c. finely chopped green onions
- 2 eggs
- 2 egg whites
- 1/2 c. shredded Cheddar cheese
- 1 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/8 tsp. ground red pepper
- 1 can chopped green chilies, drained
Directions

1Heat oven to 425°.

2Spray 10-inch nonstick skillet with nonstick cooking spray.

3Cook bell peppers and onions in skillet. Beat eggs and egg whites slightly.

4Stir in bell pepper mixture and remaining ingredients.

5Spray muffin cup pan with

7Spoon 1 tablespoon mixture into each muffin cups. Bake 8 to 10 minutes until centers are set.

8Let cool 1 minute. Loosen edges with knife and remove from pan.
