- 3 red, yellow or green peppers, cut in half
- 1 1/2 c. hot cooked Spanish rice
- 1/4 lb. Velveeta Mexican process cheese spread (with jalapeno peppers), cubed
- 1/4 c. celery slices
- 1 Tbsp. chopped cilantro
Directions

1Remove seeds from peppers and cut lengthwise.

2Combine rice, Velveeta cubes, celery and cilantro. Mix lightly.

3Place in shallow baking dish. Cover.

4Bake at 350° for 30 to 35 minutes. Makes 6 servings.
