  • 3 red, yellow or green peppers, cut in half
  • 1 1/2 c. hot cooked Spanish rice
  • 1/4 lb. Velveeta Mexican process cheese spread (with jalapeno peppers), cubed
  • 1/4 c. celery slices
  • 1 Tbsp. chopped cilantro

Directions

    Remove seeds from peppers and cut lengthwise.

    Combine rice, Velveeta cubes, celery and cilantro. Mix lightly.

    Place in shallow baking dish. Cover.

    Bake at 350° for 30 to 35 minutes. Makes 6 servings.
