- 1 lb. dried pinto beans
- 4 1/2 c. water
- 1 (4 oz.) can chopped green chilies, drained
- 2 cloves garlic, minced
- 2 tsp. chili powder
- 1 tsp. salt
- 1 1/2 c. (6 oz.) shredded Monterey Jack cheese with or without jalapeno
Directions

1Sort and wash beans; place in large Dutch oven.

2Cover with water, 2-inches above beans.

3Let soak 8 hours.

4Drain beans and return to Dutch oven.

5Add water, chilies, garlic, chili powder and salt to beans.

6Bring to boil, cover, reduce heat and simmer 2 hours or until beans are tender, stirring occasionally.

7Transfer to serving dish and sprinkle with cheese.
