- 1 cup sifted unbleached all-purpose flour
- 1/4 cup sugar
- 4 teaspoons baking powder
- 3/4 teaspoon salt
- 1 cup stone-ground yellow cornmeal
- 2 eggs
- 1 cup milk
- 1/4 cup butter (soft)
Directions

1Preheat oven to 425F and place corn stick pans in oven.

2Sift flour, sugar, baking powder, and salt into bowl.

3Stir in corn meal.

4Add eggs, milk, and butter.

5Beat with electric hand mixer until just smooth, about one minute, do not over beat.

6Grease pans with solid shortening.

7Fill pans about 2/3 full.

8Bake in hot oven (425 degrees) 12 to 15 minutes.
