Perfect Tzatziki

Ingredients

  • 2 containers plain yogurt (totalling approx. 400 grams), strained for 24 hrs (I use a combination of goat and sheep milk yogurt, but cow is fine, too)
  • Half a cucumber*, peeled and roughly grated
  • 5 to 8 cloves roasted garlic, finely minced/mashed
  • Juice from 1/2 a lemon (or to taste)
  • 8 to 15 leaves fresh mint, chopped
  • 1.5 - 2 tbsp olive oil
  • salt (2 generous pinches)
