Ingredients

  • 1 lb lasagna noodles, cooked and cooled
  • 2 tbsp unsalted butter, or margarine
  • 2 large onion, chopped
  • 12 potato, boiled cooled and mashed. (can sub 1 box instant potato)
  • 1/2 cup milk
  • 3/4 lb grated cheese (I usually use cheddar)
  • 1 salt and pepper to taste

    Preheat oven to 350

    Cook lasagna noodles

    While pasta is boiling begin to sautee onion in butter
  4. 4
    Mix mashed potato with milk half the onions, and grated cheese till creamy

    Layer a lasagna pan with noodles, and potato mixture alternating every other layer until all potato and noodles are used, ending with noodles.

    Pour remaining onions and butter over casserole, cover, and bake for 30-45 min.

    Let cool before digging in!
