- 1 cup raisins
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 1 teaspoon baking soda
- 1 cup flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon clove
- 1/4 teaspoon salt
- 1 teaspoon lemon rind
- 1 cup nuts
- 1/2 teaspoon nutmeg
- 1 soft persimmon (make sure it's really really ripe)
Directions

1Cream the butter and then beat in the sugar.

2Add the eggs one at a time and beat well.

3Peel and mush the persimmon, mix it with the baking soda, and then add to the creamed mixture.

4Add the flour, spices and salt.

5Blend in lemon rind, raisins and nuts.

6Turn into a greased 13 by 9 pan and bake at 350 degrees for 20-30min.

7Frost with your favorite icing.
