  • 1/4 c. plus 2 Tbsp. butter
  • 1 c. sugar
  • 2 eggs
  • 1 tsp. soda
  • 1 c. persimmon pulp
  • 2 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cloves
  • 1 c. chopped pecans
  • 1 c. dates (optional)

Directions

    Cream butter, sugar and eggs. Add soda to persimmon pulp. Add dry ingredients to butter mixture, then add soda and persimmon mixture. Add pecans. Bake at 300° for 1 1/2 hours or if using 2 small loaf pans, bake for 1 hour.
