  • 2 c. mashed persimmon
  • 3/4 tsp. salt
  • 1 2/3 c. evaporated milk
  • 3 eggs
  • 3/4 c. sugar
  • 1 Tbsp. butter
  • 1 1/4 tsp. cinnamon
  • 1/4 tsp. ginger (optional)
  • 1/8 tsp. cloves (optional)

Directions

    Beat all ingredients together with rotary beater.

    Pour into pastry-lined pie pan (9-inches).

    Bake at 425° for 45 to 55 minutes or until knife inserted 1-inch from side of filling comes out clean.

    Center may still look soft, but will set later.
