- 1 can (15-1/2 oz.) pinto beans, undrained
- 1 tbsp. olive oil
- 1/4 sm. onions, diced
- 2 cloves garlic, minced
- Salt and pepper
- 2 tbsp. crumbled fresh cheese
- shredded monterey jack cheese
Directions

1In a bowl, mash beans with fork or spoon.

2Heat oil in a skillet on medium.

3Add onion and garlic to skillet and cook until tender.

4Add beans, salt and pepper and cook, stirring often, until bean liquid starts to evaporate.

5Reduce heat and simmer until desired consistency, about 5 minutes.
