- 2 c. sugar
- 2 c. grated sweet potatoes
- 2 c. self-rising flour
- 2 eggs
- 1 c. milk
- 1 stick margarine or butter
- 1 c. coconut (optional)
- 1 tsp. vanilla
- a little cinnamon
Directions

1Clean and cap persimmons (must be ripe and soft).

2Run through a sieve.

3Add the rest of ingredients.

4Bake in sheet pan or in layers at 350° for 45 to 50 minutes.
