- 2 c. persimmon pulp
- 1 c. sugar
- 2 c. buttermilk
- 1 Tbsp. melted butter
- 1 tsp. soda
- 3 eggs, separated
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 1/2 c. flour
Directions

1Sieve the persimmons and add egg yolks.

2Beat well.

3Add sugar and beat again.

4Sift flour with salt, soda, baking powder and cinnamon.

5Add to persimmon mixture alternately with the buttermilk.

6Fold in beaten egg whites; pour into greased 2-quart dish and bake 40 to 50 minutes at 350°.

7Serve with whipped cream.
