  • 2 c. persimmon pulp
  • 3 eggs, beaten
  • 1 3/4 c. milk
  • 1 1/2 c. sugar
  • 3 Tbsp. butter, melted
  • 2 c. flour (plain)
  • 1/2 tsp. soda
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. allspice

    Wash persimmons; put through sieve to remove seeds.

    Combine persimmon pulp, eggs, sugar, milk and butter in large bowl.

    Sift dry ingredients together and add to mixture.

    Grease pan (15 1/2 x 10 1/2-inch).

    Pour batter into pan and bake at 350° for 45 minutes or until firm to touch.
