  • 1 7/16 cups all purpose flour
  • 1 teaspoon baking powder
  • 7 3/8 tablespoons extra-virgin olive oil
  • 3 eggs
  • 7/8 cup pesto sauce good quality variety
  • 5/8 cup pecorino cheese grated
  • 1/4 cup pine nuts un-toasted

    Preheat the oven to 180 degrees Celsius.

    Toast the pine nuts in a non-stick pan.

    Beat the eggs with the oil and the pesto sauce in a bowl.

    In another bowl, combine the flour with the baking powder and the cheese.

    Add the liquid ingredients to the dry ingredients.

    Last, add the toasted pine nuts to the mixture.

    Butter and flour a springform pan and pour the batter inside.

    Garnish the top with a few of the pine nuts, and bake for approximately 30 to 35 minutes (until a toothpick inserted in the center comes out clean).

    Remove the cake from the oven and serve.
