- 3 tablespoons garlic, minced
- 3 tablespoons fresh ginger, minced
- 14 cup fish sauce
- 14 cup sugar
- 2 tablespoons sugar
- 14 cup rice vinegar
- 2 tablespoons fish sauce
- 1 teaspoon paprika
- 12 lb shrimp or 12 lb chicken meat or 12 lb tofu, diced
- 2 eggs
- 12 lb bean sprouts
- 4 -5 green onions, sliced
- 1 carrot, shaved with peeler
- 12 cup peanuts, pounded fine
- 1 lime, sliced
Directions

1Boil rice noodle for 10 min., drain.

2Fry chili, garlic and ginger in wok.

3add protein and cook until done.

4add rice noodles and mix.

5Mix sauce ingredients together, add to wok.

6Slip eggs under simmering sauce and noodles, cook until done.

7Add sprouts and green onions, mix well.

8Garnish with shaved carrots, peanuts and sliced lime.
