- 1 large cut up pheasant
- 4 Tbsp. flour
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 c. water
- 1/2 tsp. sage
- 3 bay leaves
- pinch of thyme
- 1 c. tomato juice
Directions

1Combine flour, salt and pepper in grocery bag.

2Shake with pheasant until lightly coated.

3Place skin side down on nonstick cookie sheet.

4Bake in 450° oven for 15 minutes, turn once. Discard melted fat.

5Place cooked pheasant in ovenproof casserole. Add remaining ingredients. Cover and bake at 350° for 30 minutes. Uncover.

6Cook until sauce thickens.
