Philadelphia Rice Pudding

Ingredients
- 1 c. long grain rice, rinsed and drained well
- 1 1/2 qt. skim milk
- 1 c. sugar
- 1/2 tsp. salt
- 1 dash freshly grated nutmeg
- 1 tsp. vanilla
- 1 to 2 c. raisins or chopped dates (as desired)
Directions

1Mix all together and place in a 3-quart covered saucepan. Bring to a simmer on top of the stove and then place, covered, in a 300° oven.

2Bake without disturbing or stirring for 2 hours and 45 minutes.

3The pudding will almost caramelize and become a pale golden color.
