  • 1/3 lb American cheese, cut into 1/2-inch pieces (or use Cheddar)
  • 1/4 lb provolone cheese, cut into 1/2-inch pieces

  • 8 (9 1/2 inch) spring roll wrappers
  • 6 egg yolks, beaten slightly
  • vegetable oil (canola is good)
