- 1 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2 large eggs
- 1/4 c. butter
- 3/4 c. yellow cornmeal
- 1/2 tsp. baking soda
- 1 c. buttermilk
- 1/3 c. picante sauce
Directions

1Heat an 8-inch cast iron skillet at 425° for 5 minutes. Combine first 5 ingredients in a large bowl.

2Make a well in center of mixture.

3Set aside.

4Combine buttermilk, eggs and picante sauce.

5Add to dry ingredients, stirring just until moistened. Remove skillet from oven.

6Add butter and return to oven 1 minute or until butter melts.

7Pour mixture into hot skillet.

8Bake at 425° for 20 minutes or until golden.

9Serve immediately.
