- 6 lb. ripe cukes
- 3 small red peppers
- 2 c. white sugar
- 2 c. vinegar
- 1 tsp. celery seed
- 6 large onions
- 3 green peppers
- 1/4 c. salt
- 2 c. brown sugar
- 1 tsp. turmeric
- 1 tsp. mustard seed
Directions

1Pare cukes.

2Cut lengthwise; discard seeds and pulp.

3Dice cukes.

4Peel onions and dice.

5Cut peppers and dice.

6Combine vegetables.

7Stir in salt.

8Let stand overnight.

9Drain and rinse in cold water; drain again.

10Combine sugar, vinegar, turmeric, celery and mustard seed.

11Cook slowly until cukes are transparent, but not mushy.

12Seal in hot sterilized jars.

13Makes 3 quarts.
