  • 1 gal. beets, cook first; then wash and stem beets for mixture
  • 1 1/2 tsp. salt
  • 2 1/2 c. water
  • 2 c. sugar
  • 1 1/2 c. vinegar
  • 1 1/2 Tbsp. pickling spice

    Cook mixture to a boil;

    then add beets and cook for 15 minutes.

    Pack in hot jars;

    then pour syrup over the beets.
