- 7 lb. beets
- 3 c. cider vinegar
- 4 c. granulated sugar
Directions

1Use medium to small beets for best results.

2Cut stems at approximately 2 inches above beet.

3Thoroughly wash beets without breaking skin of beets.

4Put in large enamel pot.

5Cook beets until tender, approximately 50 minutes.

6Try not to let beets crack and bleed during cooking.

7After cooking and while hot, place beets into cold water.
-
8While still warm, the peelings will come off easily by squeezing with your hand.

9Slice peeled beets and put in clean bowl.
