- beets
- 1 c. sugar
- 1 c. white vinegar
- 1/2 tsp. salt to pt. jars or 1 tsp. salt to qt. jars
Directions

1Remove stems and leaves from beets and wash thoroughly.

2Cook beets, covered, in water until they are slightly tender, but not real soft.

3Pour water off, cool and peel beets.

4After they are cooled, quarter or slice beets and if they are real small, you can leave them whole.

5Place them in jars, have flats and rings of jars hot.

6Mix sugar and vinegar in pan and bring to a good boil.

7Pour over beets that are in the jars and add salt according to the size of the jar.

8Place flats and rings on jars.

9Place in water bath cooker until hot.

10Remove from cooker, cover, until cooled and sealed.
