- 2 lb. carrots, peeled and cut into 3 x 1/4-inch strips
- 1 1/2 c. sugar
- 1 1/2 c. vinegar
- 1 1/2 c. water
- 1/4 c. whole mustard seed
- 3 (1/2-inch) cinnamon sticks
- 3 whole cloves
Directions

1Cook carrots, covered, about 15 minutes in a small amount of boiling salted water.

2Drain carrots and place in a glass or plastic container.

3Combine remaining ingredients in a saucepan and bring to a boil and simmer 20 minutes.

4Pour over carrots and toss well.

5Cover tightly and refrigerate.
