- 1 qt. vinegar
- 1 qt. sugar
- 1 Tbsp. whole cloves
- 1 Tbsp. allspice
- 1 Tbsp. mace
- 1 stick cinnamon
Directions

1Boil young carrots until skin slips; remove skin.

2Slice or leave whole.

3Pour syrup, spices (in a bag), sugar and boiling hot over carrots.

4Let stand overnight.

5Bring to a boil for 5 minutes.

6Remove spices and pack in jars.

7Pour syrup over carrots and seal.
