- 4 medium size cauliflower
- 1/2 c. salt
- 1/4 c. pickling spices
- 2 qt. vinegar
- 2 c. sugar
Directions

1Separate flowerets of cauliflower.

2Add salt.

3Cover with cold water; drain and rinse with cold water.

4Tie spices in muslin bag and boil with vinegar and sugar 10 minutes.

5Add cauliflower; cook 3 minutes until nearly tender.

6Pack in sterilized jars and fill with boiling syrup and seal.

7May add peeled pickling onions and strips of green pepper to cauliflower, if desired.
