- 2 c. white vinegar
- 1 medium lemon, peeled and sliced
- 12 hard-cooked eggs, shelled
- 1 tsp. mixed pickling spice
- 2 tsp. sugar
- 1 tsp. salt
Directions

1Combine all ingredients, except eggs.

2Simmer 8 minutes. Place the shelled eggs in a wide-mouthed 1 1/2-quart jar.

3Strain in the hot vinegar.

4Cover and chill in the refrigerator overnight before using.

5The eggs will keep in the pickling solution for a week or more in the refrigerator.
