Layer Salad

Ingredients

  • 2 c sliced carrots
  • 1 medium head iceberg lettuce, shredded
  • salt and pepper
  • 1 c. celery, sliced
  • 1 (10 oz.) pkg. frozen peas, cooked and chilled
  • 1/2 c. chopped Bermuda onion
  • 2/3 c. pimento stuffed olives
  • 1 lb. bacon, crisp cooked and crumbled
  • 1 recipe Blender Mayonnaise
  • 1 tsp. sugar

Directions

    Cook carrots in a small amount of boiling salted water until tender-crisp; drain.

    Chill in refrigerator.

    Place lettuce in large glass bowl.

    Season with salt and pepper.

    Layer carrots, celery, peas, onion, olives and bacon over lettuce.

    Spread 1 cup Blender Mayonnaise over top.

    Sprinkle with sugar if desired. Garnish with parsley and additional olives.

    Serve with remaining mayonnaise.

    Can use 1 cup mayonnaise with 1/4 cup milk and 3 teaspoons sugar.

    Mix and pour on top instead of Blender Mayonnaise.
