- 1 large red onion, halved and thinly sliced
- 1 teaspoon dried oregano
- 1 bay leaf
- 1/2 teaspoon salt
- 1/2 cup cider vinegar
Directions

1Place onion in a medium saucepan with enough cold water to cover. Bring to a boil over medium heat.

2When water begins to boil, cook 1 minute. Remove from heat and drain.

3Place onion in a medium bowl. Add remaining ingredients and just enough water to barely cover. Let stand at room temperature 3-4 hours.

4To use, drain well. Serve as garnish or condiment.
