Ingredients

  • 1 kg Small onions
  • 30 grams salt
  • 1 tsp dried chilli flakes
  • 1 tsp coriander seeds
  • 1 tsp mustard seeds
  • 1 tsp black peppercorns
  • 1 bay leaf
  • 1 liter cider vinegar
  • 1 tbsp good sea salt

Directions

    Salt peeled onions 12-24 hours

    Rinse well and dry

    Pack into sterilized jars (2quart)

    Simmer 5 minutes vinegar, 1tbspn sea salt, bay leaf and spices.

    Fill each jar with hot vinegar mix, give a little shake and remove air bubbles.

    Divide spices between the jars

    Place lids on jars and leave on the shelf for at least 10 days.

    The longer the better.
