- 1 kg Small onions
- 30 grams salt
- 1 tsp dried chilli flakes
- 1 tsp coriander seeds
- 1 tsp mustard seeds
- 1 tsp black peppercorns
- 1 bay leaf
- 1 liter cider vinegar
- 1 tbsp good sea salt
Directions

1Salt peeled onions 12-24 hours

2Rinse well and dry

3Pack into sterilized jars (2quart)

4Simmer 5 minutes vinegar, 1tbspn sea salt, bay leaf and spices.

5Fill each jar with hot vinegar mix, give a little shake and remove air bubbles.

6Divide spices between the jars
-
7Place lids on jars and leave on the shelf for at least 10 days.

8The longer the better.
